On of the best parts about Mother’s Day, in my opinion, is the food. Kids are usually so sweet bringing a homemade breakfast to mom – usually in bed. Or maybe you celebrate with a fancy Mother’s Day brunch instead. Mimosas are my other favourite. This recipe for fruit topped pancakes is perfect for any way you decide to celebrate Mother’s Day.

I absolutely love planning formal Mother’s Day brunches. Usually the weather is nice enough to hold them outdoors, which means you get all that natural spring beauty into your decorating. It’s a lovely way to honour the generations of mothers in a family, all while spending time together.

What I love about this recipe is that is fancy enough to be served at your Mother’s Day brunch, but simple enough that dad and the kids can make it for mom on Sunday morning too.

I love topping pancakes with things that aren’t syrup. Syrup is boring. Unless it’s pure maple syrup, that is. Whipped cream, homemade sauces, and fruit are my all time favourites.

The best part about fruit is it’s a lot healthier for you than other toppings. Natural sweetness in the fruit adds a nice flavour combination with the sweet pancake, too. Fruit also looks pretty when serving – which is great if you want to really wow mom on Mother’s Day!

Frozen fruit makes things easy

What I love about this recipe is that it can be easily made with things you already have on hand. No special trip to the grocery store! Just use whatever frozen berries you have on hand to make the delicious fruit topping that we used for this recipe.

For the pancakes:

You can use your favourite pancake recipe, or try this simple one.

  • 1 1/2 cups of all-purpose flour
  • 3 1/2 tsp of baking powder
  • 1 tsp of salt
  • 1 tbpsn of white sugar
  • 1 1/4 cups of milk
  • 1 egg
  • 3 tablespoons of butter, melted

For the fruit topping:

  • 1 cup of frozen berries
  • 4 tablespoons of sugar

How to make homemade pancakes for Mother’s Day

Pancake recipe
  1. You don’t even have to wake up that early! First, mix your flour, baking soda, and salt together in a small bowl. Then melt the butter in the microwave. while you measure milk into a bowl or pitcher.

  1. From there, add the egg and butter to the mixture and whisk to combine. Make sure your butter isn’t too hot or you might cook your egg!
How to make homemade pancakes
  1. Then add your dry ingredients and mix well. Don’t over mix! You might have some lumps in the mixture and that’s OK.
  2. Let the mix stand while you prepare the berry topping.
Berry syrup
  1. Combine the frozen berries and sugar in a small saucepan. Bring them to a boil, letting them get syrupy. The longer they boil, the more it will reduce.
  2. If you want to speed things up, cook them for a few minutes, strain the liquid, and run it through the blender for a few minutes.
Pancakes
  1. Cook your pancakes on a griddle or in a cast iron pan (my favourite) until golden brown. Then top with the syrup, some additional frozen (or fresh) berries, and serve!

Ingredients

For the pancakes

Instructions

1. Combine flour, baking powder, and salt in a small bowl.

2. Melt butter.

3. Mix milk, melted butter, and egg together.

4. Add dry ingredients.

5. Cook pancakes on griddle or in frying pan until golden brown.

6. Create the berry topping by cooking berries and sugar on the stove.

7. Stain, puree, and serve.
