Who can resist pizza? It’s the ultimate comfort food: cheesy, delicious, and made just how you like it. What’s not to love? Personally it’s one of my favourite foods of all time. But, it can also be pretty unhealthy, especially when you order it out. It also can be a pain to make at home. This super spinach and ricotta flatbread pizza recipe is going to change the way you look at homemade pizza!

The ricotta cheese in this is the secret to make it it so good! Ricotta is super healthy for you and it’s loaded with protein. If you add healthy ingredients onto your pizza like spinach, tomato, and red onion you’re looking at a pretty healthy swap over traditional pizza

What to use as a flatbread pizza base

For this recipe we used a puff pastry as the base but you can substitute that with any flatbread of your choice. In fact, we picked the flatbread because it’s what we had on hand! This flatbread pizza recipe is perfect if you’re looking for a last-minute weeknight meal that tastes great.

Some ideas to use as a flatbread pizza base are:

  • Puffy pastry
  • Naan flatbread
  • Popular flatbread brands like “Flatout”
  • A pita
  • Balady bread (Egyption flatbread)
  • Your favourite homemade flatbread recipe

You could also use a tortilla but it doesn’t stay together as good as the thicker flatbreads.

How long does it take to make this easy spinach and ricotta flatbread pizza recipe?

It really depends on what you use for the base. If you opt for the puff pastry like we did it takes about 10 minutes to actually make the pizza and another 25-35 minutes of cooking time.

Add a little extra if you make your own flatbread and take a little time off the cooking time if you go with something like naan. Basically at that point you’re just trying to heat up your ingredients, crisp the flatbread, and melt your cheese.

Because it can be thrown together so quickly this is a great choice when you need a quick weeknight dinner. But it also looks so pretty that you could serve it when entertaining guests as an appetizer or main course.

What are some alternatives to this flatbread pizza recipe?

If you’re not a fan of some of these ingredients you can definitely make substitutions. We went with light toppings to give this flatbread a healthy spin. You could easily add your favourite pizza toppings to the recipe, though. Mushrooms, peppers, and chicken would all be delicious with this recipe.

This is a great way to get kids eating healthy! Everything tastes better when it’s on pizza, after all. Put a spin on their favourite junk food by making this recipe for kids. You could also swap out some of the ingredients for their favourite toppings so even picky eaters can be pacified. In fact, that’s the best part about making pizza! Everyone can make their own.

Ingredients

  • 1/2 package of puff pastry

Toppings, Quantities are to taste

  • Approximately 1/3 of a cup of Ricotta cheese
  • Handful of cut baby tomatoes
  • About 10 pieces of spinach
  • 1/4 of a red onion
  • A few slices of Prosciutto
  • 1/4 cup grated mozzarella
  • Balsamic glaze (drizzle)

Instructions

Bake at 350 degrees for approximately 25-35 minutes or until pastry is crisp and cheese has melted. See below for full instructions.

How to make this easy spinach and ricotta flatbread pizza

Rolling out the puff pastry for our homemade pizza recipe

First, roll out your puff pastry. If you’re using a pre-made flatbread you can just lay that out on your baking sheet. For those making a homemade flatbread, make that first and let it cool before moving on to the next step.

Ricotta cheese is the base of our spinach and ricotta flatbread pizza instead of tomato sauce

Spoon ricotta cheese onto your pizza base as evenly as you can. Ricotta is crumbly by nature so it might be tough to get it even. Don’t bring it too close to the edges so it stays on top of the crust where it belongs.

Slice your baby tomatoes in half or thin slices, whichever you prefer. you’ll also want to slice up some red onions and your prosciutto.

Add ingredients however you like!

Spread your ingredients out on the flatbread pizza base. Start with the spinach because it’s lighter and lays flat, then add onions, tomatoes, and prosciutto. Make sure your ingredients are evenly spaced so you get a variety in each bite!

Then top with a small amount of grated mozzarella on top. You could also use sliced fresh mozzarella instead.

Balsamic glaze makes our spinach and ricotta flatbread pizza recipe divine.

Drizzle with balsamic glaze. We just used a store bought variety, but you could also make your own. It adds a little bit of sweetness to the pizza which makes it even more delicious. It’s also healthy!

Bake your homemade pizza at 350 degrees.

Bake for 25-35 minutes or until pastry is crisp and your cheese is melted. You may need to adjust cooking time depending on your flatbread pizza base and oven type (convection ovens cook a bit faster).

Let rest for a minute so the cheese can become firm enough to stay together. Slice and serve! You could enjoy this flatbread pizza on its own or include a salad on the side. It should serve 1-2 people depending on your appetite (and how much you want leftovers).
